Pickle me Red

This is one of the more simple ones to put together but they last longer than the average recipe. They even taste better with time.

What you need

* 2 or 3 big red onions
* 1 Madam Jeanette
* vinegar
* white granulated sugar
* 1 or 2 bay leaves (laurierblad)
* pigment granules

Step 1

Slice the red onions across the width in rings as in the picture.
Make sure you have all the ingredients ready and a clean airtight container. Sometimes I also use an empty pot of beans or something just rinse it all of to take away any odours.


Step 2
fill the container with 1/3 plain vinegar and 2/3 lukewarm water
Add 2 teaspoons of sugar (to taste)
put in the bailey leave(s) and 3 or 4 piment grains.
Put in the onion rings, and the madam jeanette.

You can keep the madam jeanette whole and put it in or slice it in half remove the seeds and put it in. Would be a bit hotter though then.


Close the pot well so it doesnt speill and shake it well. Keep it turned upside down for a couple hours. Once the liquid starts turning red its ready to eat.

Tip

* Keep it in the pot a day or two as it tastes better then.
* Eat it with Nasi, white rice, or use it to pimp up your sandwich ,....Anything goes.
